This is the best scungilli salad. Scungilli has no fat and is high in protein making it the perfect diet/health food. I buy La Monica 29oz. cans of sliced conch known as scungilli. The scungilli has only 45 calories per serving so just add up the other calories if your on a diet.
Ingredients:
1 29oz. can La Monica sliced scungilli
2 stalks of celery chopped
1/2 cup red onion chopped
2 tablespoons of chopped Italian/flat leaf parsley (not curly!)
1 small can sliced and pitted black olives (drained)
1/4 to 1/2 cup of your best olive oil
1 lemon juiced and strained
1 teaspoon sea salt
1/4 teaspoon ground black pepper
red pepper flakes (optional)
1 glove garlic chopped finely
OK real easy. Rinse the canned scungilli well ( I soak for a couple of seconds and then repeat one more time). Take a medium mixing bowl. Add all the above ingredients. Toss until mixed well and refrigerate for 30 minutes to let the flavors meld and enjoy!

Listen up. Here's the way to do this right. Use the can and brand as proposed, but no need to rinse. Squeeze a lime and an orange over the scungilli. Chop onion, jalapeno, and parsley. Toss. Add olive oil.
